Ingredients for Broccoli Corn Jalapeno Stir Fry Recipe

  • Broccoli head, separated into florets 1 medium

  • Corn kernels boiled 2 cups

  • Jalapenos slices 2 tablespoons

  • Salt to taste

  • Butter 1 tablespoon

  • Onion finely chopped 1 medium

  • Almonds roasted and roughly chopped 2 tablespoons

Method

Step 1

Heat sufficient water in a deep non-stick pan and bring it to a boil. Add broccoli florets and salt and blanch for 1 minute. Strain, wash florets in running water and set aside.

Step 2

Heat butter in a non-stick pan. Add onions and sauté till translucent.

Step 3

Add almonds, mix well and sauté for 1 minute. Add blanched broccoli florets, corn and mix well on high heat for 1 minute.

Step 4

Add salt and mix well for 1 minute. Add jalapenos and mix again. Sauté for 1 minute.

Step 5

Serve hot.
