Breaded Chicken with Garlic Sauce

Ingredients list for Breaded Chicken with Garlic Sauce

  • 450 grams Boneless chicken breasts strips
  • for coating Bread crumbs
  • 2 tablespoons Garlic chopped
  • 2 teaspoons Red chilli flakes
  • to taste Black peppercorns crushed
  • to taste Salt
  • 2 teaspoons Soy sauce
  • + to deep fry Oil 1 tablespoon
  • 1 tablespoon Cornflour/ corn starch
  • 1 Spring onion greens finely chopped
  • 1 Egg
  • for coating Refined flour (maida)

Method

  1. Take chicken in a bowl. Add 1 teaspoon chilli flakes, crushed peppercorns, salt, 1 tablespoon chopped garlic and soy sauce and mix well. Set aside to marinate for 30 minutes.
  2. To prepare garlic sauce, heat 1 tablespoon oil in a non-stick pan. Add remaining garlic and saute for 10-15 seconds. Add ½ teaspoon chilli flakes, crushed peppercorns and salt and mix well. Add some water, mix and cook for 1-2 minutes.
  3. Dissolve cornstarch in some water to make smooth slurry, add to the pan and mix well. Add spring onion greens, mix and cook till it thickens.
  4. Heat sufficient oil in a deep pan.
  5. Break an egg in a bowl, add some water and whisk well. Set aside.
  6. Take refined flour in another bowl. Add salt, crushed peppercorns and remaining chilli flakes and mix well.
  7. Coat marinated chicken with refined flour mixture and place on a plate. Dip in egg mixture and coat with breadcrumbs. Deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  8. Serve hot with garlic sauce.
