Bihari cuisine is predominantly vegetarian because the traditional Bihari society, influenced by Buddhist and Hindu values of non-violence, does not eat eggs, chicken, fish and other animal products. However, there is also a section who relish meat and fish dishes which is common due to the number of rivers in Bihar.  Smoked food is one of the most remarkable thing about this cuisine.

Ingredients for Black Gram Sattu Roti Recipe

  • Whole Wheat Flour 2 cups

  • Black gram to taste

  • Cumin seeds 1 teaspoon

  • Milk 1 cup

  • Black gram sattu 1 1/2 cups

  • Asafoetida 1 a pinch

  • Carom seeds (ajwain) 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Sugar 2 teaspoons

  • Pure ghee to serve


Step 1

Sieve atta with salt. Place in a bowl. Add cumin seeds. Knead into soft dough using half the quantity of milk.

Step 2

If required use water. Keep dough aside. Take black gram sattu in a bowl. Add asafoetida, carom seeds, red chilli powder, sugar and salt to taste.

Step 3

Knead into a dough using remaining milk. If required use water. Divide into eight equal portions and roll into small even sized balls.

Step 4

Divide wheat dough into eight equal portions. Shape into a thick disc and place one portion of sattu dough in the center. Gather the edges and seal.

Step 5

Roll out into a roti of three inches diameter. Heat a tawa and roast the roti on both sides till done. Apply ghee and serve hot.
