Ingredients list for Baingan Saaswe

  • 1 large Brinjals roasted
  • 1 cup Thick buttermilk
  • 1 teaspoon Mustard seeds
  • 1/2 cup Coconut scraped
  • 3-4 cloves Garlic
  • to taste Salt
  • 5 Green chillies
  • 2 teaspoon Oil

Method

  1. Roast the brinjal, peel and mash. Grind three red chillies, half the mustard seeds, coconut, garlic and salt with a little water to a fine paste. Add the buttermilk and a little salt to the brinjal and mix. Add the ground masala and mix.
  2. Heat oil in a small pan. Add the remaining mustard seeds. When they splutter add the remaining red chillies, broken into smaller pieces. Add to the brinjal mixture and cover immediately to trap the flavours.
  3. Mix well and serve.
