Ingredients list for Arroz Con Leche

  • 1/2 cup Rice
  • a pinch Milk
  • 1/4 cup Sugar
  • 2 cups Milk
  • 2 one-inch Cinnamon
  • 2 Eggs
  • 1 tablespoon Butter
  • 1/2 cup Raisins
  • a pinch Cinnamon powder

Method

  1. Preheat oven to 180°C. Place the rice and lemon rind in a saucepan. Add water to cover the rice and bring to a boil. Cover and cook for another fifteen minutes.
  2. Remove the rind and take the pan off the heat. Add sugar, milk and cinnamon stick and stir well. Remove from the heat and allow it to cool. Mix in eggs and butter.
  3. Fold in the raisins, transfer the mixture into baking dish and bake in the preheated oven for ten to fifteen minutes or till golden brown. Sprinkle cinnamon powder. Serve hot.
