How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Arroz Con Leche Recipe

  • Rice 1/2 cup

  • Milk a pinch

  • Sugar 1/4 cup

  • Milk 2 cups

  • Cinnamon 2 one-inch

  • Eggs 2

  • Butter 1 tablespoon

  • Raisins 1/2 cup

  • Cinnamon powder a pinch

Method

Step 1

Preheat oven to 180°C. Place the rice and lemon rind in a saucepan. Add water to cover the rice and bring to a boil. Cover and cook for another fifteen minutes.

Step 2

Remove the rind and take the pan off the heat. Add sugar, milk and cinnamon stick and stir well. Remove from the heat and allow it to cool. Mix in eggs and butter.

Step 3

Fold in the raisins, transfer the mixture into baking dish and bake in the preheated oven for ten to fifteen minutes or till golden brown. Sprinkle cinnamon powder. Serve hot.
