Ingredients
- 400 grams boneless chicken leg with skin
- 1½ tablespoons zaatar spice mix
- Salt to taste
- Crushed black peppercorns to taste
- 1 tablespoon finely chopped garlic
- 2 teaspoons lemon juice
- 4-5 tablespoons olive oil
- 2 tablespoon finely chopped fresh parsley leaves
- 1 whole garlic bulb, halved
- Mixed pitted olives to serve
- Sour cream to serve
Method
- Take chicken pieces in a large bowl, add salt, crushed black peppercorns, garlic, lemon juice, zaatar spice mix and 2 tablespoons olive oil and rub well so that each chicken piece is completely covered. Set aside to marinate for 20 minutes.
- Add parsley and mix till well combined.
- Heat remaining olive oil in a non-stick grill pan, place garlic halves along with the chicken pieces with the skin side facing down. Grill on high heat for 4-5 minutes, flip and grill the other side for 3-4 minutes. Reduce the heat to medium, continue to cook till the chicken is cooked completely. Take the pan off the heat, place it on a worktop. Allow to rest for 1-2 minutes.
- Slice the grilled chicken and arrange them on a serving plate. Serve with mixed olives, grilled garlic and sour cream.
