Zaatar Chicken

As simple as it can be, this flavourful chicken marinated with, zaatar spice and then grilled, sliced and served with mixed olives, grilled garlic and sour cream. A taste that will linger on and on.

Ingredients 

  • 400 grams boneless chicken leg with skin 
  • 1½ tablespoons zaatar spice mix
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tablespoon finely chopped garlic
  • 2 teaspoons lemon juice
  • 4-5 tablespoons olive oil
  • 2 tablespoon finely chopped fresh parsley leaves
  • 1 whole garlic bulb, halved
  • Mixed pitted olives to serve
  • Sour cream to serve

Method

  1. Take chicken pieces in a large bowl, add salt, crushed black peppercorns, garlic, lemon juice, zaatar spice mix and 2 tablespoons olive oil and rub well so that each chicken piece is completely covered. Set aside to marinate for 20 minutes. 
  2. Add parsley and mix till well combined.
  3. Heat remaining olive oil in a non-stick grill pan, place garlic halves along with the chicken pieces with the skin side facing down. Grill on high heat for 4-5 minutes, flip and grill the other side for 3-4 minutes. Reduce the heat to medium, continue to cook till the chicken is cooked completely. Take the pan off the heat, place it on a worktop. Allow to rest for 1-2 minutes.
  4. Slice the grilled chicken and arrange them on a serving plate. Serve with mixed olives, grilled garlic and sour cream.
