Tortilla Baked Eggs

Ingredients

  • 6 eggs
  • 2 tortillas
  • Butter for greasing
  • 4 tablespoons pizza sauce
  • 1 small green capsicum, cut into strips
  • 1 small red capsicum, cut into strips
  • 1 small yellow capsicum, cut into strips
  • Salt to taste
  • Crushed black peppercorns to taste
  • ½ cup grated mozzarella cheese
  • 4-5 black olives, pitted and sliced
  • Fresh coriander leaves for garnish

Method

  1. Preheat oven to 180º C
  2. To make 2 portions, grease a 4 inch shallow round cake tin with some butter. Place a tortilla in the tin and spread 2 tablespoons pizza sauce over it evenly. Spread a few green capsicum strips, few red capsicum strips and few yellow capsicum strips over it. Break 3 eggs and place them over the vegetables keeping a little distance between each. Sprinkle salt and crushed black peppercorns. Sprinkle ¼ cup mozzarella cheese and arrange black olive slices all over. Place the cake tin in the preheated oven and bake for 10-12 minutes. 
  3. Bring the cake tin out of the oven and gently place the tortilla baked eggs in a serving plate. Garnish with coriander leaves and serve hot. 
  4. Repeat the process with the remaining ingredients.
