Ingredients
- 500 grams pineapple, roughly chopped
- 1½ cups sugar
- A pinch of salt
- 1 tablespoon lemon juice
- Toasted bread slices to serve
Method
- Put pineapple pieces in a blender jar, add ¼ cup water and blend to a fine paste.
- Heat a non-stick pan, add the blended paste, mix well and cook for 2-3 minutes.
- Add sugar, mix and cook till sugar melts. Discard the scum that forms on the surface of the mixture.
- Add salt, mix and continue to cook for 5-6 minutes. Switch the heat off, add lemon juice and mix till well combined.
- Allow the mixture to cool completely. Transfer into airtight jars and store.
- Apply this jam over toasted bread slices or use as required.
