Ingredients
- 200 grams cottage cheese (paneer), cut into 1 inch pieces
- 1 cup sugar
- 4-5 green cardamoms
- 8-10 saffron strands
Method
- Heat a pressure cooker, add sugar, 2½ cups water and green cardamoms, mix and let the mixture come to a boil.
- Add cottage cheese, close the cooker and cook under pressure, on medium heat, till 1 whistle is released. Lower the heat and cook for 1 hour.
- Open the cooker once the pressure settles completely.
- Heat a shallow non-stick pan. Drain the liquid directly into the pan, add saffron and cook.
- Add cottage cheese pieces, mix well and cook till thick. Allow to cool completely.
- Arrange the cottage cheese pieces on a serving platter and serve.
