Method

  1. Heat a pressure cooker, add sugar, 2½ cups water and green cardamoms, mix and let the mixture come to a boil.
  2. Add cottage cheese, close the cooker and cook under pressure, on medium heat, till 1 whistle is released. Lower the heat and cook for 1 hour.
  3. Open the cooker once the pressure settles completely.
  4. Heat a shallow non-stick pan. Drain the liquid directly into the pan, add saffron and cook.
  5. Add cottage cheese pieces, mix well and cook till thick. Allow to cool completely.
  6. Arrange the cottage cheese pieces on a serving platter and serve.
