Ingredients
- 8 eggs
- 1½ teaspoons Madras curry powder
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 green chillies, chopped
- 2 medium onions, chopped
- Salt to taste
- 10-15 curry leaves
- 2 medium tomatoes, chopped
- ¼ teaspoon turmeric powder
- 1½ teaspoons red chilli powder
- Crushed black peppercorns to taste
- 2-3 tablespoons chopped fresh coriander leaves
- Chapatti for serving
Method
- Heat oil in an earthenware pot, add cumin seeds and once they start to change colour, add green chillies and mix well.
- Add onions and salt, mix and sauté till golden brown. Add curry leaves and mix well.
- Add tomatoes, mix and saute on medium heat for 4-5 minutes or till tomatoes become pulpy.
- Add turmeric powder, red chilli powder and Madras curry powder and mix well.
- Break eggs directly into the pan and mix well. Cook for 4-5 minutes.
- Add crushed black peppercorns and coriander leaves and mix well.
- Transfer into a serving bowl and serve hot with chapattis.
