Lauki Raita

Lauki becomes endearing with this simple preparation as a lightly spiced raita. Quick and nourishing. Absolutely refreshing and cooling, best to have during the hot summer months.

  1. Peel and grate lauki. Transfer it into a deep non-stick pan, add 4-5 cups of hot water and salt and cook for 4-5 minutes. Drain out the water and let the lauki cool.  
  2. Take yogurt in a bowl, add red chilli powder and salt and whisk well. Add the bottle gourd and mix well. 
  3. Transfer into a serving bowl, sprinkle roasted cumin powder and coriander leaves and serve. 
  4. Chef’s tip: Ensure to squeeze out excess water from the cooked lauki.
