Ingredients

  • 3-4 medium potatoes, peeled and cut into 1inch pieces
  • Salt to taste
  • 2 tablespoons butter
  • 2-3 tablespoons fresh cream
  • 2-3 tablespoons grated parmesan cheese
  • 2 tablespoons chopped black olives
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon crushed black peppercorns
  • A pinch of sumac powder + for garnish      

Method  

  1. Heat a non-stick pan, pour 2 cups water into it, add potatoes and salt and mix well. Cover and cook on medium heat for 10-12 minutes or till the potatoes are soft.
  2. Drain and pass the boiled potatoes through a strainer into a bowl. 
  3. Add the mashed potatoes to the same pan. Add butter, fresh cream and parmesan cheese, mix well and cook for 2-3 minutes. Switch the heat off.
  4. Add black olives, parsley, crushed black peppercorns and sumac powder and mix well.
  5. Transfer into a serving bowl, sprinkle sumac powder on top and serve.
