Ingredients
- 3-4 medium potatoes, peeled and cut into 1inch pieces
- Salt to taste
- 2 tablespoons butter
- 2-3 tablespoons fresh cream
- 2-3 tablespoons grated parmesan cheese
- 2 tablespoons chopped black olives
- 2 tablespoons chopped fresh parsley
- ½ teaspoon crushed black peppercorns
- A pinch of sumac powder + for garnish
Method
- Heat a non-stick pan, pour 2 cups water into it, add potatoes and salt and mix well. Cover and cook on medium heat for 10-12 minutes or till the potatoes are soft.
- Drain and pass the boiled potatoes through a strainer into a bowl.
- Add the mashed potatoes to the same pan. Add butter, fresh cream and parmesan cheese, mix well and cook for 2-3 minutes. Switch the heat off.
- Add black olives, parsley, crushed black peppercorns and sumac powder and mix well.
- Transfer into a serving bowl, sprinkle sumac powder on top and serve.
