Ingredients
- 3 cups cooked short grain rice
- 4 eggs
- 2 tablespoons oil
- 2 tablespoons finely chopped garlic
- 20-25 medium prawns, peeled, cleaned, and deveined
- 1 tablespoon cooking wine
- 3-4 asparagus stalks, sliced diagonally
- White pepper powder to taste
- Salt to taste
- 3-4 asparagus heads, peeled and trimmed
- Diagonally sliced spring onion greens as required
Method
- Break the eggs, separate yolks from the whites and put them in separate bowls.
- Take rice in a mixing bowl, add the yolks and mix well.
- Heat oil in a wok, add garlic and sauté for 1-2 minutes.
- Add prawns, mix and sauté on high heat for 2-3 minutes. Add cooking wine and mix well.
- Add asparagus stalks and mix well. And white pepper powder and salt, mix well and cook for 1-2 minutes.
- Add asparagus heads, mix well and cook for 1-2 minutes. Add the rice and toss well. Add spring onion greens and mix well.
- Transfer into a serving plate and serve hot.
