Golden Fried Rice

Ingredients

  • 3 cups cooked short grain rice
  • 4 eggs
  • 2 tablespoons oil
  • 2 tablespoons finely chopped garlic
  • 20-25 medium prawns, peeled, cleaned, and deveined
  • 1 tablespoon cooking wine
  • 3-4 asparagus stalks, sliced diagonally
  • White pepper powder to taste
  • Salt to taste
  • 3-4 asparagus heads, peeled and trimmed
  • Diagonally sliced spring onion greens as required

Method

  1. Break the eggs, separate yolks from the whites and put them in separate bowls. 
  2. Take rice in a mixing bowl, add the yolks and mix well.
  3. Heat oil in a wok, add garlic and sauté for 1-2 minutes.
  4. Add prawns, mix and sauté on high heat for 2-3 minutes. Add cooking wine and mix well.
  5. Add asparagus stalks and mix well. And white pepper powder and salt, mix well and cook for 1-2 minutes.
  6. Add asparagus heads, mix well and cook for 1-2 minutes. Add the rice and toss well. Add spring onion greens and mix well. 
  7. Transfer into a serving plate and serve hot.
