Ingredients
- 10-15 Pro V Select Zahidi Whole Natural Dates
- ½ cup tamarind
- 1 cup chopped jaggery
- ½ tablespoon cumin seeds
- 1 tablespoon fennel seeds
- 1 teaspoon red chilli powder
- Black salt to taste
- ½ teaspoon dried mango powder (amchur)
Method
- Seed Pro V Select Zahidi Whole Natural Dates.
- Heat a pressure cooker, add dates, tamarind, jaggery and 1½ cups water and mix well.
- Close the lid and cook under pressure on medium heat till the pressure is released 3-4 times.
- Heat a small non-stick pan, add cumin seeds and fennel seeds and dry roast for 2 minutes. Transfer in a mortar and crush coarsely.
- Open the lid of the pressure cooker once the pressure settles completely.
- Let the mixture cool slightly, transfer it into a grinder jar and grind to fine paste. Add 1 cup water and continue to grind.
- Heat a non-stick pan and strain the ground mixture into it and cook stirring, on medium heat, till it thickens slightly.
- Add red chilli powder, black salt, 2 teaspoons ground roasted spice mixture and dried mango powder and mix well and let it come to a boil.
- Transfer into a serving bowl, allow to cool and serve.
