Ingredients

Method

  1. Seed Pro V Select Zahidi Whole Natural Dates.
  2. Heat a pressure cooker, add dates, tamarind, jaggery and 1½ cups water and mix well.
  3. Close the lid and cook under pressure on medium heat till the pressure is released 3-4 times.
  4. Heat a small non-stick pan, add cumin seeds and fennel seeds and dry roast for 2 minutes. Transfer in a mortar and crush coarsely.
  5. Open the lid of the pressure cooker once the pressure settles completely.
  6. Let the mixture cool slightly, transfer it into a grinder jar and grind to fine paste. Add 1 cup water and continue to grind.
  7. Heat a non-stick pan and strain the ground mixture into it and cook stirring, on medium heat, till it thickens slightly.
  8. Add red chilli powder, black salt, 2 teaspoons ground roasted spice mixture and dried mango powder and mix well and let it come to a boil.
  9. Transfer into a serving bowl, allow to cool and serve.
