Brown Rice And Anjeer Phirni

Traditional phirni as we know is made with ground rice slow cooked in milk and sugar and flavoured with green cardamom, saffron or rose water.

Method

  1. Put brown rice into a grinder jar, add ½ cup water and grind to coarse mixture.
  2. Heat milk in a deep non-stick pan, add ground rice, mix and cook, stirring a few times, on medium heat for 10-15 minutes or till the rice cooked.
  3. Meanwhile, transfer the dried figs into a grinder jar, add 3 tablespoons water and grind to fine paste.
  4. Add the fig paste to rice mixture and mix well. Add brown sugar and cook till sugar dissolves.
  5. Add green cardamom powder and mix well.
  6. Transfer into small earthenware bowls and sprinkle almond flakes on top. Garnish with dried figs, pistachios and allow to cool completely.
  7. Refrigerate for 2-3 hours and serve chilled.
