Ingredients
- ¼ cup brown Basmati rice, soaked for 30-40 minutes and drained
- 6-8 dried figs (anjeer), soaked for 2-3 hours and drained
- Chopped dried figs for garnish
- 3 cups low fat milk
- ¼ cup brown sugar
- ½ teaspoon green cardamom powder
- Almond flakes to sprinkle
- Blanched, peeled and slivered pistachios for garnish
Method
- Put brown rice into a grinder jar, add ½ cup water and grind to coarse mixture.
- Heat milk in a deep non-stick pan, add ground rice, mix and cook, stirring a few times, on medium heat for 10-15 minutes or till the rice cooked.
- Meanwhile, transfer the dried figs into a grinder jar, add 3 tablespoons water and grind to fine paste.
- Add the fig paste to rice mixture and mix well. Add brown sugar and cook till sugar dissolves.
- Add green cardamom powder and mix well.
- Transfer into small earthenware bowls and sprinkle almond flakes on top. Garnish with dried figs, pistachios and allow to cool completely.
- Refrigerate for 2-3 hours and serve chilled.
