Bhaja Masala

Ingredients

Method 

  1. Heat a pan, add cumin seeds, coriander seeds and bay leaves in a pan till fragrant. Transfer into a plate and allow to cool.
  2. Add fennel seeds, green cardamoms and dried red chillies in the same pan and dry roast till fragrant. Transfer into the same plate and allow to cool.
  3. Put the cooled roasted spices into a mixer jar and grind to a fine powder. 
  4. Transfer the masala into a jar. Use as required.
