Bal Mithai

Ready to discover a delightful sweet which is not many people have heard of or tasted? Bal mithai is from Uttarakhand. It’s a brown chocolate-like fudge made with sauteed khoya, cooked in sugar syrup and lastly coated with sugar balls.

Ingredients

  • 3 cups grated mawa/ khoya
  • 1½ cups sugar
  • 1 teaspoon ghee + for greasing
  • Sugar balls for coating

Method

  1. Heat a non-stick pan, add ¾ cup sugar and ½ cup water, mix well and cook till the syrup reaches ½ string consistency.
  2. Heat ghee in a pan, add khoya and cook on low heat till khoya turns golden brown.
  3. Add remaining sugar and mix well and cook till sugar dissolves.
  4. Add ¾ of the sugar syrup and mix well and cook for 2-3 minutes.
  5. Transfer the mixture into a greased burfi tray and spread evenly. Set aside to cool completely.
  6. Take the remaining sugar syrup in a bowl and sugar balls in another bowl.
  7. Cut the mithai into rectangles, dip in remaining sugar syrup and roll in sugar balls.
  8. Arrange them on a serving tray and serve.
