How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for White Dhokla Recipe

  • Rice , soaked for 4 hours and drained 1 cup

  • Split skinless black grams (dhuli urad dal) , soaked for 4 hours and drained 1/2 cup

  • Yogurt 1/2 cup

  • Ginger-green chilli paste 2 teaspoons

  • Salt to taste

  • Fruit salt a pinch

  • Oil to grease

  • Black peppercorns , crushed to taste


Step 1

Put rice in a mixer jar, add split black gram and sufficient water and grind into smooth and thick batter. Transfer into a bowl.

Step 2

Add yogurt and mix well. Cover and set aside to ferment for 7-8 hours.

Step 3

Heat some water in a steamer. Cover and let the water boil.

Step 4

Add ginger-green chilli paste, salt and fruit salt to the batter and mix well.

Step 5

Grease a steel plate with some oil and pour the batter into it till ¼ full, spread evenly and tap.

Step 6

Sprinkle some crushed peppercorns on top, place the plate in the hot steamer, cover and steam for 10 minutes. Remove from the steamer.

Step 7

Remove the plate from the steamer, cut the dhokla into diamonds, demould and serve hot.
