Ingredients
- 1/2 medium medium watermelon
- 1 cup papaya scoops
- 1/2 raw mango
- 1 green chilli
- 15-20 fresh mint leaves + for garnishing
- 1 lemon
- Salt to taste
- 2 teaspoons lemon juice
Method
- Scoop out small balls from the watermelon with a Parisienne scoop and put them into a bowl. Add papaya scoops.
- Peel and cut ½ raw mango into thin slices and further into thin strips.
- Finely chop together green chilli and mint leaves and add to the same bowl. Grate the rind of a lemon and add. Add raw mango strips reserving some for garnishing. Add salt and lemon juice and mix well.
- Transfer into a serving bowl, garnish with reserved mango strips and mint leaves and serve chilled.
