Ingredients
- ½ medium watermelon
- 2 cups fresh or tinned orange juice
- A pinch of salt
- 1-2 cheese slices
- 2-4 satay sticks
- A few sprig fresh curly parsley
Method
- Slice the watermelon into ½ inch thick discs.
- Heat non-stick pan, pour the orange juice into it, add salt and cook till it reduces
- Remove the seeds with the pointed end of a knife. Cut small roundels with a small cooker cutter.
- Transfer the orange juice into a bowl and let it cool down to room temperature.
- Add the watermelon roundels to the reduced orange juice and let them soak well. Keep the bowl in the refrigerator to chill.
- Cut the cheese slice into ½ inch wide strips. Cut each strips into 2 equal pieces.
- Take two 2x4 inch thermacole rectangles, keep them one over the other, wrap them with aluminium foil and keep it on a serving platter.
- Halve the satay sticks.
- Bring the bowl with watermelon roundels out of the refrigerator, pierce each with a piece of satay stick to make a lollipop and then pierce them into the thermacole piece.
- Place a cheese strip over each lollipop, make a small slit on top of each lollipop, insert a parsley sprig into the slits and serve immediately.
