Ingredients list for Wafer Par Eeda
- 100 grams Potato Wafers
- 4 Eggs
- 3 medium Onions
- 1 medium Tomato
- 2 tablespoons Oil
- 1/2 teaspoon Cumin seeds
- a few sprigs Green chillies
- a few sprigs Fresh coriander leaves
- to taste Salt
Method
- Chop onions and tomato.
Heat oil in a non stick pan. - Add cumin seeds and when it changes colour add onions and sauté.
Lightly crush the wafers. - Chop green chillies and add to the pan.
Add tomato, mix and sauté for 3-4 minutes. - Chop coriander leaves and add to the pan and mix.
Add the wafers and mix. Sprinkle a little water. - Break the eggs, one by one, and put into 4 different bowls.
Divide the wafer masala into 4 portions on the pan itself. - Make a well in the center of each portion and put an egg into it.
Sprinkle salt, drizzle a little water around the edges. - Cover and cook till the eggs are set.
Gently lift each portion onto serving plates and serve immediately.
