Vegetable Stewed Rice

Ingredients 

  • 6-8 button mushrooms, quartered
  • 4-5 French beans, blanched and cut into 1/2 inch pieces
  • 3-4 baby corn, blanched and diagonally sliced
  • 8-10 broccoli florets, blanched
  • 1 medium carrot, peeled, blanched and sliced
  • 1 medium green capsicum, cut into square pieces
  • Steamed rice to serve
  • 1 tablespoon oil
  • 1 tablespoon finely chopped garlic 
  • Salt to taste
  • 1 tablespoon cornflour slurry
  • Sliced spring onions for garnish

Method

  1. Heat oil in a non-stick pan. Add garlic and sauté well. Add mushrooms and mix well.
  2. Add French beans, baby corn, 1 cup water and salt, mix and bring to a boil.
  3. Add broccoli florets, carrot and capsicum and mix. Add cornflour slurry, mix well and bring to a boil.
  4. Take steamed rice in a serving bowl, top with stewed vegetables, garnish with spring onion greens and serve hot.
