Ingredients list for Vegetable Bombs

  • 5-6 medium Potatoes boiled and peeled
  • 3-4 Bread Stick soaked in water
  • to taste Salt
  • 1/2 cup Bread crumbs
  • 10-15 French beans finely chopped
  • 2 medium Carrots finely chopped
  • 1/2 cup Green peas blanched
  • 1/2 small Cauliflower separated into florets
  • 2 tbsps + to deep fry Oil
  • 1 medium Onion chopped
  • 3 Green chillies chopped
  • 1/4 cup Fresh coriander leaves chopped
  • to taste Salt
  • 1 teaspoon Dry mango powder (amchur)
  • 1 teaspoon Coriander powder
  • 1 tablespoon Butter


  1. Mash the potatoes in a bowl. Add soaked bread slices, salt and mix well. Keep it aside. For filling heat oil in a pan. Add onion and green chillies and sauté for a minute. Add French beans, carrots, green peas and cauliflower and cook for five to seven minutes or until done.
  2. Add coriander leaves, salt, dry mango powder, coriander powder and mix well. Set aside to cool. Divide the potato mixture into equal portions and roll out into small puris. Plate a portion of the filling in the centre along with a little butter and roll into balls.
  3. Heat sufficient oil in a kadai. Roll the balls in bread crumbs and deep fry till golden brown in colour. Drain on absorbent paper. Serve hot with tomato sauce.
