Ingredients list for Tequila Chicken
- 40 ml Tequila
- 2 Boneless chicken breasts
- to taste Sea salt
- 1 medium Red capsicum pulp seeded and sliced
- 1 medium Green capsicum seeded and sliced
- 1 medium Yellow capsicum seeded and sliced
- 1 teaspoon Garlic finely chopped
- 1 teaspoon Green peppercorns crushed
- 1 teaspoon Pink peppercorns crushed
- 1 tablespoon Butter
- to taste Salt
- 60 ml White wine
- 1/2 tablespoon Lemon juice
- 1 teaspoon Red chilli flakes
- for garnishing A fresh coriander sprig
Method
- Slice the chicken breasts thinly, place in a bowl and add 20 ml tequila and sea salt over it and set aside for marinating.
- Add capsicums, garlic, green peppercorns and pink peppercorns and mix well.
- Heat butter in a non-stick pan. Add the chicken alongwith the capsicums, garlic and peppercorns and stir-fry for a minute. Add salt and toss for a minute.
- Deglaze the pan with the white wine and flambé with the remaining tequila. Add lemon juice and red chilli flakes and mix well.
- Serve hot garnished with a coriander sprig.
