Mexico, wild and barren in the north and sultry and hot in the south, offers a cuisine that reflects the culture of the country – colourful, rich, invigorating and always, always festive! 
The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Tequila Chicken Recipe

  • Tequila 40 ml

  • Boneless chicken breasts 2

  • Sea salt to taste

  • Red capsicum pulp seeded and sliced 1 medium

  • Green capsicum seeded and sliced 1 medium

  • Yellow capsicum seeded and sliced 1 medium

  • Garlic finely chopped 1 teaspoon

  • Green peppercorns crushed 1 teaspoon

  • Pink peppercorns crushed 1 teaspoon

  • Butter 1 tablespoon

  • Salt to taste

  • White wine 60 ml

  • Lemon juice 1/2 tablespoon

  • Red chilli flakes 1 teaspoon

  • A fresh coriander sprig for garnishing

Method

Step 1

Slice the chicken breasts thinly, place in a bowl and add 20 ml tequila and sea salt over it and set aside for marinating.

Step 2

Add capsicums, garlic, green peppercorns and pink peppercorns and mix well.

Step 3

Heat butter in a non-stick pan. Add the chicken alongwith the capsicums, garlic and peppercorns and stir-fry for a minute. Add salt and toss for a minute.

Step 4

Deglaze the pan with the white wine and flambé with the remaining tequila. Add lemon juice and red chilli flakes and mix well.

Step 5

Serve hot garnished with a coriander sprig.
