Ingredients list for Tequila Chicken

  • 40 ml Tequila
  • 2 Boneless chicken breasts
  • to taste Sea salt
  • 1 medium Red capsicum pulp seeded and sliced
  • 1 medium Green capsicum seeded and sliced
  • 1 medium Yellow capsicum seeded and sliced
  • 1 teaspoon Garlic finely chopped
  • 1 teaspoon Green peppercorns crushed
  • 1 teaspoon Pink peppercorns crushed
  • 1 tablespoon Butter
  • to taste Salt
  • 60 ml White wine
  • 1/2 tablespoon Lemon juice
  • 1 teaspoon Red chilli flakes
  • for garnishing A fresh coriander sprig


  1. Slice the chicken breasts thinly, place in a bowl and add 20 ml tequila and sea salt over it and set aside for marinating.
  2. Add capsicums, garlic, green peppercorns and pink peppercorns and mix well.
  3. Heat butter in a non-stick pan. Add the chicken alongwith the capsicums, garlic and peppercorns and stir-fry for a minute. Add salt and toss for a minute.
  4. Deglaze the pan with the white wine and flambé with the remaining tequila. Add lemon juice and red chilli flakes and mix well.
  5. Serve hot garnished with a coriander sprig.
