Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Tandoori Prawns Recipe

  • Big prawns , shelled and deveined with tails intact 12-16

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Ginger-garlic paste 2 1/2 tablespoons

  • Oil 2 tablespoons

  • Turmeric powder 1 teaspoon

  • Kashmiri red chilli powder 2 teaspoons

  • Garam masala powder 1 teaspoon

  • Gram flour 4 tablespoons

  • Hung yogurt 1/2 cup

  • Onion rings to serve

  • Lemon wedges to serve

  • Green chutney to serve


Step 1

Take prawns in a bowl, add salt, lemon juice and 2 teaspoons ginger-garlic paste and mix well. Keep aside to marinate.

Step 2

Heat oil in a non-stick pan, add turmeric powder, red chilli powder, garam masala powder and gram flour, mix and sauté for a minute. Transfer into a bowl and cool down to room temperature. Add hung yogurt, remaining ginger-garlic paste and salt and mix well.

Step 3

Add prawns and mix well. Set aside to marinate for 30 minutes.

Step 4

Preheat an oven at 200º C.

Step 5

Arrange the marinated prawns on a baking tray, keep the tray in the preheated oven and bake for 10-15 minutes.

Step 6

Arrange on a serving plate, garnish with onion rings, lemon wedges and coriander sprigs and serve hot with green chutney.
