Ingredients list for Sweet Potato Tikki
- 2 cups Sweet potatoes boiled and mashed
- 1 cup Chickpeas (kabuli chana) boiled
- 1 cup Water chestnuts
- to taste Salt
- 2 teaspoons Roasted cumin seeds
- 5-6 Garlic cloves chopped
- 1 tablespoon Red chilli flakes
- to taste Crushed black peppercorns
- 1 tablespoon Fresh coriander leaves chopped
- ½ cup Cranberries roughly chopped
- for shallow frying Oil
Method
- Grind together chickpeas, water chestnuts and salt into a coarse paste.
- Take the mashed sweet potatoes in a bowl. Add the ground paste, salt, cumin seeds, garlic, chilli flakes, crushed peppercorns, coriander leaves and cranberries and mix well.
- Heat some oil in a non-stick pan.
- Divide the mixture into equal portions and shape them into medium sized patties or falafels.
- Place the falafels in the pan and shallow-fry, turning sides, till golden and evenly done from both sides. Drain on absorbent paper.
- Serve hot garnished with a mint sprig.
