Sweet Potato Snack Gnocchi These gnocchi made with sweet potatoes make an excellent snack. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 25 May 2016 in Recipes Non Veg New Update Main Ingredients Sweet potatoes, Onion powder Cuisine Italian Course Snacks and Starters Prep Time 21-25 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Sweet Potato Snack Gnocchi 3 medium Sweet potatoes boiled, peeled and mashed 1 teaspoon Onion powder 2 tablespoons Parmesan cheese powder a pinch Nutmeg powder 1 Egg yolk to taste Salt ¾ teaspoon Crushed black peppercorns + for dusting Refined flour (maida) ½ cup for deep-frying Oil 1 teaspoon Garlic Powder ½ teaspoon Paprika to taste Salt 3 tablespoons Parmesan cheese powder Method Combine the potatoes, parmesan cheese powder, nutmeg powder, egg yolk, salt, half teaspoon crushed peppercorns and flour in a bowl, mix and knead into a soft dough. Mix together the ingredients for the seasoning and set aside. Roll the dough into a cylinder of two centimeter diameter and further cut into one inch pieces. Dust them with flour, press them with a fork lightly to flatten a little. Heat sufficient oil in a pan. Deep-fry the prepared gnocchis till golden and crisp. Drain on absorbent paper. Sprinkle the seasoning on top and mix lightly.
