Ingredients list for Sweet Chilli Chicken
- 6 teaspoons Sweet Chilli Sauce
- 600 grams Boneless Chicken cut into 1 inch pieces
- 1 tablespoon Fish sauce
- 2-3 tablespoons Oil
- 2-3 cloves Garlic
- 1 tablespoon Ginger finely chopped
- 2-3 Fresh red chillies
- 2 tablespoons Tomato ketchup
- 1/4 cup Chicken stock
- 7-8 Fresh coriander sprigs
- 1 Egg
Method
- Add fish sauce to the chicken, mix and set aside for 10-15 minutes.
- Heat oil in a non-stick pan. Crush garlic cloves through a press and add along with ginger, mix and sauté for 1 minute. Add chicken and mix well.
- Diagonally slice fresh red chillies and add. Toss to mix and cook for 2 minutes.
- Add sweet chilli sauce and mix well. Add tomato ketchup and mix again. Add chicken stock and mix. Cook till the sauce thickens and the chicken is done.
- Chop coriander leaves. Break egg into a bowl and whisk well. Add to the chicken in the pan and keep stirring. Add coriander leaves and mix well. Cook for ½ minute.
- Serve hot.
