Ingredients list for Sweet And Sour Fish

  • 400 grams Fish Fillets cut into 1 inch pieces
  • 1/2 cup Pineapple juice
  • 5 tablespoons Cornflour/ corn starch
  • 4 tablespoons Tomato sauce
  • 2 tablespoons Sugar
  • 3 tablespoons Oil
  • 1/2 teaspoon MSG
  • 1/2 teaspoon White pepper powder
  • to taste Salt
  • 2 cups Chicken stock or fish stock
  • 1 inch piece Ginger finely chopped
  • 4-6 cloves Garlic finely chopped
  • 1 medium Onion quartered and layers separated
  • 1 medium Green capsicum cut into 1 inch pieces
  • 1/2 medium Red capsicum cut into 1 inch pieces
  • 1/2 medium Yellow capsicum cut into 1 inch pieces
  • 1 slice Pineapple cut into 1 inch pieces
  • 2 tablespoons Vinegar

Method

  1. Heat sufficient oil in a wok, roll the fish pieces in two tablespoons cornflour and deep fry on medium heat until the edges start to turn brown. Drain on absorbent paper. Mix the remaining cornflour in one cup of water.
  2. Blend tomato sauce, sugar, pineapple juice, MSG, white pepper powder and salt in one cup of stock. Heat three tablespoons oil in a wok or a pan, add ginger and garlic and stir fry for a minute. Add onion and continue to stir fry for a minute. Stir in the sauce and spice mix, all the capsicum pieces, remaining stock and the cornflour mixture.
  3. Cook for a couple of minutes or until the sauce starts to thicken, stirring continuously. Add fried fish and pineapple pieces and cook for a minute or until the sauce coats the fish pieces. Stir in vinegar and serve hot.
