Ingredients
- 1 cup sushi rice
- Salt to taste
- 2 teaspoons vinegar
- 2 teaspoons castor sugar (caster sugar)
- Oil for greasing
- 1 nori sheet, cut into 4 squares
- 2 medium English cucumber
- 1 medium avocado
- Lollorosso lettuce as required
- Wasabi mayonnaise for drizzling
- 12 pieces smoked salmon
- Black and white sesame seeds for sprinkling
- French fries to serve
Method
- Heat a deep non-stick pan, add sushi rice, 2 cups water and salt, mix well, cover and cook till the rice is completely cooked.
- Add vinegar and sugar, mix well, transfer onto a plate and let it cool down.
- Grease your palms with oil, take a portion of the rice and press it firmly into a ring mould to shape it like a patty. De-mold and set aside. Similarly, make more rice patties.
- Thinly slice English cucumber and slice tomato. Halve avocado.
- For each portion serving, place a rice patty on a serving plate. Drizzle wasabi mayonnaise on it, tear lollo rosso lettuce leaves and place it on top of the mayonnaise.
- Slice and add a few pieces of avocado on top. Sprinkle salt and top with a little shredded purple cabbage. Place a few slices of cucumber and drizzle wasabi mayonnaise. Now place a few tomato slices and sprinkle salt.
- Place a nori sheet and place 3 smoked salmon pieces on top of it. Drizzle a little wasabi mayonnaise and cover with another rice patty. Sprinkle black and white sesame seeds on top and serve.
