Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Stir Fried Vegetables with Fried Basil Recipe

  • Button mushrooms halved 5-7

  • Mushrooms shimeji 8-10

  • Babycorn diagonally sliced and blanched 5-7

  • mushrooms dried chanterelle, soaked 4-5

  • Green capsicum cut into triangles ½ medium

  • Yellow bell pepper cut into triangles ½ medium

  • Red bell pepper cut into triangles ½ medium

  • Broccoli florets, blanched 6-8

  • Bok choy 1 cup

  • Oil 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Salt to taste

  • Black pepper powder to taste

  • Soy sauce 1 tablespoon

  • Spring onions with greens diagonally sliced 2


Step 1

Heat oil in a non-stick pan, add garlic and sauté till golden. Add button mushrooms and shimeji mushrooms and toss.

Step 2

Add baby corn and chanterelle mushrooms and toss. Add salt and pepper powder and mix well.

Step 3

Add capsicum, both the bell peppers, broccoli and bok choy and toss. Add soy sauce and mix well.

Step 4

Adjust salt and pepper powder and mix again. Add spring onions and toss on high heat for a minute.

Step 5

Serve hot.
