Spinach And Cheese Crackers

Cream cracker biscuits topped with sautéed spinach and cheese and gratinated. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Spinach And Cheese Crackers

  • 1 bunch Spinach
  • 10-12 Cream Crackers
  • 1 cup Cheese grated
  • 1 tablespoon Butter
  • 1 medium Onion finely chopped
  • 2-3 cloves Garlic finely chopped
  • to taste Salt
  • a pinch Dry oregano

Method

  1. Blanch spinach in sufficient boiling water for two minutes. Drain, refresh, and chop finely. Heat butter in a thick-bottomed pan. Add onion and sauté till light pink.
  2. Add garlic and continue to sauté for a minute. Add chopped spinach and salt and sauté on medium heat for two minutes till all the water has evaporated. Add dried oregano and half of the grated cheese, mix well and continue to cook on low heat for a minute.
  3. Remove from heat and allow to cool. Preheat oven to 180ºC. When spinach mixture is cooled, take a spoonful of it and spread evenly on a cream cracker. Sprinkle some grated cheese and keep aside.
  4. Similarly prepare the remaining biscuits and arrange on a baking tray. Place baking tray in the preheated oven and gratinate the crackers at 180ºC till cheese melts. Serve hot.
