Ingredients list for Spicy Pineapple Fried Rice
- 8 slices Fresh pineapple chopped
- 3 cups Cooked rice
- 3 tablespoons Oil
- 2 Eggs
- 10-12 Cashewnuts
- 1 medium Onion sliced
- 1/4 cup Chicken stock
- to taste Salt
- 1/2 teaspoon Soy sauce
- 1 teaspoon Fish sauce
- 1 teaspoon Red chilli powder
- 1/2 teaspoon Crushed red chillies
- a pinch Dried red chillies sliced
- 1/4 cup Shelled green peas
- 1 teaspoon Brown sugar
Method
- Heat 1 tbsp oil in a non stick wok. Break 2 eggs into the wok and cook stirring continuously. Transfer into a bowl. Heat 1 tbsp oil in the same wok, add cashewnuts and saute till light golden. Transfer into a bowl.
- Heat 1 tbsp oil in the same wok, add onion and saute till transluscent. Add shrimps, chicken stock, salt, soy sauce, fish sauce, red chilli powder, crushed red chillies, sliced dried red chillies, green peas and brown sugar and mix well.
- Add pineapple and mix and cook for 2 minutes. Add rice, scrambled eggs, cashewnuts and mix well. Halve a pineapple, scoop out flesh from one half leaving a ½ inch thick wall all around to shape like a boat. Put the rice in it and serve.
