This recipe is from FoodFood TV channel By Sanjeev Kapoor 17 Jun 2016 in Recipes Course New Update Main Ingredients Chicken mince, Rice Cuisine Fusion Course Rice Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Spicy Chicken Fried Rice With Crispy Basil Leaves 200 grams Chicken mince 2 1/2 cups Rice 1/2 cup Fresh basil leaves 3 Fresh red chillies 2 Green chilli 7-8 cloves Garlic to taste Salt 3 tablespoons Oil 1 teaspoon Fish sauce 1 teaspoon Sugar 1 Hard boiled eggs Method Pound two red and one green chillies with the garlic and salt in a mortar and pestle. Cut the remaining red and green chilli into thin diagonal slices. Heat the oil in a non stick wok; add the basil and fry till crisp. Drain and set aside. Add the chilli-garlic mixture to the same oil and sauté until fragrant. Add the minced chicken and stir-fry for three to four minutes. Add the rice and toss to mix well. Add the fish sauce, salt and sugar and continue to stir-fry for a minute. Add a little water and cook till the rice is heated through. Add the red and green chilli slices and mix thoroughly. Halve the egg vertically and further slice each half into three pieces vertically. Transfer the rice onto a serving plate, place the egg slices over and top with crisp basil leaves.
