Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Spicy Chicken Fried Rice With Crispy Basil Leaves Recipe

  • Chicken mince 200 grams

  • Rice 2 1/2 cups

  • Fresh basil leaves 1/2 cup

  • Fresh red chillies 3

  • Green chilli 2

  • Garlic 7-8 cloves

  • Salt to taste

  • Oil 3 tablespoons

  • Fish sauce 1 teaspoon

  • Sugar 1 teaspoon

  • Hard boiled eggs 1

Method

Step 1

Pound two red and one green chillies with the garlic and salt in a mortar and pestle. Cut the remaining red and green chilli into thin diagonal slices.

Step 2

Heat the oil in a non stick wok; add the basil and fry till crisp. Drain and set aside. Add the chilli-garlic mixture to the same oil and sauté until fragrant. Add the minced chicken and stir-fry for three to four minutes.

Step 3

Add the rice and toss to mix well. Add the fish sauce, salt and sugar and continue to stir-fry for a minute. Add a little water and cook till the rice is heated through.

Step 4

Add the red and green chilli slices and mix thoroughly. Halve the egg vertically and further slice each half into three pieces vertically. Transfer the rice onto a serving plate, place the egg slices over and top with crisp basil leaves.  Serve immediately.
