Ingredients list for Simple and Easy Egg Curry
- 4 Eggs peeled
- 4 tablespoons Coconut Milk
- 4 medium Onions, sliced
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Kashmiri red chilli powder
- 2 teaspoons Coriander powder
- 1 teaspoon Garam masala powder
- 1 cup Coconut milk
- to taste Salt
- 1 cup Thick coconut milk
Method
- Heat oil in a non stick pan. Add onions and saute till golden brown.
- Add turmeric powder, chilli powder, coriander powder, garam masala powder and sauté for a minute.
- Add eggs and sauté for a minute. Add salt, thin coconut milk and cook for four to five minutes.
- Add thick coconut milk, mix well. Once a boil comes, take the pan off the heat.
- Serve hot with appam, chapati or dosa.
