Ingredients list for Sesame and Banana Bread
- ½ cup Sesame seeds (til) toasted
- 1/3 cup + for dusting Refined flour (maida)
- 2 Ripe bananas peeled and mashed
- ½ cup Whole wheat flour (atta)
- for greasing Butter
- ½ brown sugar/jaggery
- a pinch Baking soda ¼ teaspoon +
- ¼ teaspoon Salt
- 1 tablespoon Extra-virgin olive oil
- 1 large Egg lightly beaten
- 2 tablespoons Yogurt
- Glaze -
- 1 cup Castor sugar (caster sugar)
- ¼ cup brown sugar/jaggery
- Juice of ½ lemon
Method
- Preheat the oven to 180°C. Grease a loaf tin with some butter and dust with some refined flour.
- Combine together the refined flour, wheat flour, brown sugar, baking soda and salt in a bowl and mix well. Add the sesame seeds and mix.
- Combine together the olive oil, egg, banana and yogurt in another bowl and mix well. Add this to the flour mixture and fold well.
- Pour the batter in the greased tin, put the tin in the preheated oven and bake for forty-five minutes. Remove from oven, cool and demould.
- To make the glaze, heat a non-stick pan. Add the castor sugar, brown sugar, lemon juice and one tablespoon water, mix and cooktill the sugar melts.
- Drizzle the prepared glaze on the bread, spread evenly, slice and serve.
