Safed Aloo

This rich potato preparation is called thus because it is white in colour and mildly spiced. Goes well with any Indian bread. This is a Sanjeev Kapoor exclusive recipe.

Safed Aloo

Ingredients 

  • 4 medium potatoes , boiled and peeled
  • 10-12 almonds, blanched and peeled
  • 1 tablespoon poppy seeds
  • 3/4 cup yogurt
  • 1/2 cup grated mawa
  • Salt to taste
  • 1/4 teaspoon green cardamom powder
  • 2 tablespoons oil
  • 4 dried button red chillies
  • 2 teaspoons grated ginger 
  • 1 tablespoon lemon juice
  • Fresh coriander sprigs for garnish

Method

  1. Cut potatoes into ½ inch pieces and set aside.
  2. Put almonds and poppy seeds in a blender jar and blind to a fine powder.
  3. Take yogurt in a bowl, add almond-poppy seed powder, mawa, salt and green cardamom powder and mix well.
  4. Heat oil in a non-stick pan, add button red chillies and ginger, mix and sauté for 1 minute. Add the potatoes, mix well and sauté for 2-3 minutes on medium heat.
  5. Add the yogurt mixture and mix well. Cook for 4-5 minutes on medium heat.
  6. Add lemon juice and mix well.
  7. Transfer into a serving bowl, garnish with coriander sprigs and serve hot.
