Rolled Cheese Omelette

Ingredients list for Rolled Cheese Omelette

  • 12 Eggs
  • 8 tablespo For topping Processed cheese grated
  • to taste Salt
  • 4 tablespoons Oil
  • 2 Medium onions finely chopped
  • 12-16 Button mushrooms finely chopped
  • 2 Medium tomatoes finely chopped
  • 2-3 Green chillies finely chopped
  • 8 tablespoons Spinach shredded
  • 8 to serve White bread slices toasted

Method

  1. For each portion, break 3 eggs into a bowl, add salt and beat well.
  2. Heat 1 tablespoon oil in a non-stick pan, add ¼ onions, ¼ mushrooms and ¼ tomato, salt and green chillies, mix and sauté for 2 minutes.
  3. Add beaten eggs, mix and cook for 30 seconds.
  4. Add 2 tablespoons cheese and 2 tablespoons spinach, roll into an omelette and cook till fully done. Cut into 2 equal pieces.
  5. Keep 2 toasted white bread slices on a serving plate, keep a piece of omelette on each toast, sprinkle some more cheese on top and serve immediately.
