Ingredients
- 12 eggs
- 8 tablespoons processed cheese grated + for topping
- Salt to taste
- 4 tablespoons oil
- 2 medium onions, finely chopped
- 12-16 button mushrooms, finely chopped
- 2 medium tomatoes, finely chopped
- 2-3 green chillies, finely chopped
- 8 tablespoons spinach shredded
- 8 white bread slices toasted
Method
- For each portion, break 3 eggs into a bowl, add salt and beat well.
- Heat 1 tablespoon oil in a non-stick pan, add ¼ onions, ¼ mushrooms and ¼ tomato, salt and green chillies, mix and sauté for 2 minutes.
- Add beaten eggs, mix and cook for 30 seconds.
- Add 2 tablespoons cheese and 2 tablespoons spinach, roll into an omelette and cook till fully done. Cut into 2 equal pieces.
- Keep 2 toasted white bread slices on a serving plate, keep a piece of omelette on each toast, sprinkle some more cheese on top and serve immediately.
