Rice Stuffed Omelette Simple egg omelette made special stuffed with a spicy rice and chicken mixture. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 02 Mar 2017 in Recipes Non Veg New Update Main Ingredients Cooked rice, Eggs Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Rice Stuffed Omelette 1 cup Cooked rice 8 Eggs 1 tablespo as required Oil 4-6 Garlic cloves roughly chopped 1 medium Onion finely chopped ½ cup Tomato puree 4-5 Chicken sausages cut into small cubes 2 tablespoons Tomato ketchup 1 teaspoon Fresh thyme to taste Salt to taste Crushed black peppercorns 2-3 tablespoons Milk Method Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté for 10 seconds. Add onion and sauté till translucent. Add tomato puree, mix and cook for 1minute. Add sausages, mix and cook for 1minute. Add tomato ketchup and mix. Add rice, fresh thyme, salt, crushed peppercorns, mix and cook for 1 minute. Break eggs into a bowl. Add milk, crushed peppercorns and salt and whisk well. Heat some oil in another non-stick pan. Pour a quarter of the egg mixture, mix lightly and cook till the omelette is set. Put some rice mixture on one side of the omelette and fold the other side over it. Similarly make more omelettes.
