Ingredients list for Reewa Pulao
- 250 grams Red pumpkin (bhopla/kaddu) peeled and cut into cubes
- 2 tablespoons Pure ghee
- 1-2 Bay leaves
- 6-8 Black peppercorns
- 10-15 Almonds
- 10-12 Cashewnuts
- 1 tablespoons Raisins
- 1 1/2 cups Basmati rice soaked
- to taste Salt
- a pinch Saffron (kesar)
Method
- Heat 3 cups water in a deep non-stick pan. Heat ghee in another deep non-stick pan.
- Add bay leaves, peppercorns, almonds, cashewnuts, raisins and pumpkin cubes to the ghee and mix. Add rice and sauté for 1-2 minutes.
- Add salt and saffron and sauté for ½ minute. Add hot water. When the mixture comes to a boil again, cover and cook till the rice is done.
- Serve hot.
