Ingredients list for Reewa Pulao

  • 250 grams Red pumpkin (bhopla/kaddu) peeled and cut into cubes
  • 2 tablespoons Pure ghee
  • 1-2 Bay leaves
  • 6-8 Black peppercorns
  • 10-15 Almonds
  • 10-12 Cashewnuts
  • 1 tablespoons Raisins
  • 1 1/2 cups Basmati rice soaked
  • to taste Salt
  • a pinch Saffron (kesar)

Method

  1. Heat 3 cups water in a deep non-stick pan. Heat ghee in another deep non-stick pan.
  2. Add bay leaves, peppercorns, almonds, cashewnuts, raisins and pumpkin cubes to the ghee and mix. Add rice and sauté for 1-2 minutes.
  3. Add salt and saffron and sauté for ½ minute. Add hot water. When the mixture comes to a boil again, cover and cook till the rice is done.
  4. Serve hot.
