By Sanjeev Kapoor 24 May 2016 in Recipes Course New Update Main Ingredients Quinoa, Potatoes Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Quinoa and Vegetable Patties ½ cup Quinoa roasted 2 large Potatoes boiled, peeled and mashed 2 Garlic cloves minced 1 small Carrot peeled and grated 2 Spring onions with greens chopped 1 cup Fresh spinach leaves (palak) chopped 1 teaspoon Mixed herbs to taste Salt to taste Crushed black peppercorns ¼ cup Parmesan cheese ¼ cup Cornflour/ corn starch to deep fry Olive oil Method Combine the potatoes, garlic, carrot, spring onion with greens, spinach, mixed herbs, salt and crushed peppercorns in a bowl and mix well. Add the parmesan cheese and mix well. Take the cornstarch in a bowl. Add some water and mix to make a smooth slurry. Divide the prepared vegetable mixture into eight equal portions and shape them into patties. Dip the patties in the slurry and coat with the quinoa. Heat some oil in a non-stick pan. Place the prepared patties on it and shallow-fry till evenly done and golden from both sides.
