Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Protein Rich Poha Recipe

  • Pressed Rice 2 cups

  • Sprouted Mauth 1/2 cup

  • Oil 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Ginger grated 1 inch piece

  • Green chillies chopped 3

  • Curry leaves 6-8

  • Onions 2 medium

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Fresh coriander leaves chopped 1 tablespoon

Method

Step 1

Take poha in a colander, pour three to four cups of water over to moisten them. Drain and keep aside. Boil sprouted mauth in two cups of water till just done. Drain well and keep aside.

Step 2

Heat oil in a non-stick pan and add cumin seeds and sauté for few seconds. Add grated ginger, chopped green chillies, curry leaves, onions, turmeric powder, boiled mauth and sauté for five to seven minutes till onions are soft. Add poha and toss over medium heat till it is heated through. Add salt and lemon juice.

Step 3

Toss well. Garnish with chopped coriander leaves.
