Ingredients list for Prawn Puffs
- 1 cup Prawns (medium) chopped
- Refined flour (maida) 1 cup + 1 tablespoon + for dusting
- 2 tablespoons Clarified butter
- A pinch + to taste Salt
- 1 tablespo for deep-frying Oil
- 1 tablespoon Garlic minced
- to taste Red chilli flakes
- to taste Black pepper powder
- 1 tablespoon Butter
- 3 tablespoons Milk
- 2 tablespoons Processed cheese grated
Method
- Combine 1 cup flour, ghee and a pinch salt in a bowl. Add water as required, mix and knead into a stiff dough. Set aside for 1 hour.
- Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté till pink. Add prawns, mix and sauté for a minute.
- Add chilli flakes, pepper powder and salt and mix well. Add butter and mix well.
- Add 1 tablespoon flour and mix well. Add milk, mix well and cook on low heat for 2 minutes. Remove from heat and set aside to cool.
- Add cheese to the prawn mixture and mix well.
- Divide the dough into equal portions and roll out the portions into thin large discs dusting with flour. Prick the discs with a fork and cut out smaller diskettes using a cookie cutter.
- Put a portion of the prepared filling on one side of the diskettes, bring the other side over and press the edges to stick and form crescent shaped puffs.
- Heat sufficient oil in a pan. Deep-fry the puffs till golden and crisp. Drain on absorbent paper.
- Serve hot.
