Ingredients list for Poached Egg Tuna Burger
- 4 Eggs
- 4 Canned Tuna
- Olive oil for grilling
- 20 Small spring onion bulbs with stems
- to taste Salt
- 1 teaspoon Vinegar
- 1 medium Tomato
- 8-12 Iceberg lettuce leaves
- to taste Crushed black peppercorns
- Tuna mayonnaise
- 1 cup Canned tuna
- 4 teaspoons Mayonnaise
- 3 teaspoons Yogurt
- 1 Pickled jalapenos cut into slices
Method
- To make one burger, heat some olive oil in a non-stick grill pan. Place 5 spring onion bulbs with stems and grill till evenly done from all sides.
- Heat sufficient water in a deep non-stick pan. Add salt and boil.
- To make tuna mayonnaise, place tuna in a blender jar. Add mayonnaise, yogurt and jalapeno slices and blend into a coarse mixture. Transfer into a bowl.
- Slit a burger bun into halves. Place on the grill pan and grill till both sides turn crisp.
- Break an egg in another bowl.
- Add vinegar to the boiling water. Stir with a whisk, gently slide in the egg and let it poach.
- Slice tomato.
- Place 2-3 lettuce leaves on the grilled bun half base. Spread a spoonful of tuna mayonnaise on top and place 2 tomato slices.
- Spread a spoonful of tuna mayonnaise on the inner side of the other grilled bun half and place grilled spring onions on it. Drain the poached egg and put on the base bun. Sprinkle crushed peppercorns on top. Make remaining burgers similarly.
- Serve immediately.
