By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Chicken, Plum jam Cuisine Fusion Course Main Course Chicken Prep Time 31-40 minutes Cook time 51-60 minutes Serve 4 Taste Tangy Level of Cooking Difficult Others Non Veg Ingredients list for Plum Chilli Roast Chicken 1 tablespoon Chicken 5-6 Plum jam seeded 1 Chicken whole with skin to taste Sea salt 1 inch piece Ginger 7-8 clove Garlic 8 medium Carrot cut into large piece 8 medium Potato cut into large piece 1 tablespoon Butter 2 tablespoon Oil Method Rub the sea salt inside and all over the outside of the chicken. Grind red chillies with ginger and garlic to a fine paste. Rub this paste inside and all over the outside of the chicken. Let it marinate for fifteen minutes to half an hour. Preheat the oven or broiler to 180°C. Keep the potatoes and carrots in the boiler. Place the chicken over the vegetables and cook for about forty five minutes. If cooking in a normal oven, layer the potatoes and carrots in a baking tray, place the chicken over them and cook. Mix way through drizzle some oil and brush with a little butter and continue to cook till the chicken is fully cooked. Mix plum jam with a little of the remaining chilli paste and spread over the chicken. Sprinkle a little sea salt over the vegetables. Cut the chicken into bite size pieces and serve hot with the vegetables.
