Pineapple Waldrof

Ingredients 

  • 3 pineapple slices, cut into ½ inch cubes
  • 1/2 cup walnut kernels, toasted
  • 1 medium bunch Iceberg lettuce, hand torn
  • 1 celery stalk, cut into 1/2 inch pieces
  • 3 tablespoons mayonnaise
  • 2 tablespoons cream
  • Salt to taste
  • 1/2 teaspoon crushed black peppercorns 

Method

  1. Roughly break the walnuts into smaller pieces. Using a rolling pin crush a few walnuts to a coarse powder. In a mixing bowl, mix in pineapple, lettuce leaves, celery and walnut pieces.
  2. Add mayonnaise and cream. Add salt and freshly crushed pepper. Lightly toss the salad so that the dressing evenly coats the pineapple, walnut and lettuce leaves.
  3. Garnish it with coarse walnut powder and serve cold.
