Pineapple Lapsi

Pineapple puree adds a new dimension to this broken wheat sweet dish. Pineapple Lapsi is a very appealing sweet dish of roasted and cooked broken wheat sweetened with pineaple and flavoured pleasantly with cardamom powder. Roasting the broken wheat in ghee gives the Lapsi a rich brown colour, intense aroma and nice flavour. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Pineapple Lapsi

  • 1 cup Broken Wheat
  • 1 cup Fresh Pineapple Puree
  • ¼ cup Ghee
  • 3 cups Milk
  • 3 cups Sugar
  • ½ teaspoon Green cardamom powder
  • 1 teaspoon Almonds finely chopped
  • 1 teaspoon Pistachios finely chopped

Method

  1. Heat ghee in a non-stick pan, add broken wheat and sauté till light brown.
  2. Add milk, pineapple puree, two cups of water and sugar. Stir till all the liquid evaporates and broken wheat gets completely cooked.
  3. Add green cardamom powder, almonds and pistachios. Mix well and serve hot.
