Ingredients list for Peri Peri Chicken
- 500 grams Chicken legs
- + 3 tablespoons Olive oil 1 teaspoon + ¼ cup
- 5-6 Fresh red chillies
- 6-8 Garlic cloves
- 1 medium Onion
- 2-3 Fresh parsley sprigs
- 2-3 Fresh oregano sprigs
- 1 teaspoon Paprika powder
- to taste Salt
- 1 tablespoon Red wine vinegar
- 2 tablespoons Lemon juice
- 1 teaspoon Crushed black peppercorns
- to serve French fries
- 1 tablespoon Butter
- to serve Steamed corn on the cob
Method
- Preheat oven to 180º C.
- Heat 1 teaspoon olive oil in a non-stick pan, add chillies and garlic.
- Roughly chop onion and add to the pan and cook for 4-5 minutes. Take it on a plate and cool.
- Grind the prepared chilli mixture, parsley, oregano, paprika powder, salt, red wine vinegar, lemon juice, crushed peppercorns, 3 tablespoons olive oil to a smooth paste.
- Make incisions on the chicken, add the ground paste and rub the spices over chicken. Keep in the refrigerator for 3-4 hours.
- Place the marinated chicken on a baking tray, put the tray in the preheated oven and bake for 15-18 minutes.
- Place French fries on a serving plate.
- Heat butter in a non-stick pan, place corn on the cob and sauté till brown and done.
- Place peri peri chicken in the centre of the plate, place sautéed corn on the cob on other side and serve immediately.
