Ingredients
For dressing
- 2-3 garlic cloves, chopped
- Salt to taste
- Black pepper powder to taste
- 1 tablespoon yogurt
- 1 tablespoon dijon mustard
- 1 tablespoon raspberry jelly
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
Method
- To make the dressing whisk together chopped garlic, salt, pepper powder, yogurt, Dijon mustard, raspberry jam and balsamic vinegar. While whisking slowly add the extra virgin olive oil.
- Break the lettuce leaves with hand and arrange in a salad bowl. Add baby carrots, cherry tomatoes, diced pears and toss lightly. Add the dressing and toss well. Serve chilled.
