Ingredients list for Pear Salad

  • 4 medium Pears diced
  • 8 small Carrots
  • a few leaves Lettuce
  • 8 Cherry tomatoes
  • For dressing
  • 2-3 cloves Garlic chopped
  • Salt
  • Black pepper powder
  • 1 tablespoon Yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Raspberry jelly
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Extra virgin olive oil

  1. To make the dressing whisk together chopped garlic, salt, pepper powder, yogurt, Dijon mustard, raspberry jam and balsamic vinegar. While whisking slowly add the extra virgin olive oil.
  2. Break the lettuce leaves with hand and arrange in a salad bowl. Add baby carrots, cherry tomatoes, diced pears and toss lightly. Add the dressing and toss well. Serve chilled.
