A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Paneer Gulgul Recipe

  • Paneer (cottage cheese) 100 grams

  • Refined flour (maida) 1 cup

  • Semolina (rawa/suji) 1/4 cup

  • Ghee 2 tablespoons

  • Salt to taste

  • Carom seeds (ajwain) 1/4 teaspoon

  • Milk 1/2 cup

  • Red chilli powder 1 teaspoon

  • Dried fenugreek leaves (kasoori methi) powder 1/4 teaspoon

  • Amchur powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Oil for deep-frying


Step 1

Mix together maida, suji, 2 tbsps ghee, salt and carom seeds in a bowl. Add milk and enough water and knead into a dough.

Step 2

Apply a little ghee on the dough and cover with a damp muslin cloth and let it rest for about 15 minutes.

Step 3

Heat sufficient oil in a kadai. Crumble paneer and put into a bowl. Add red chilli powder, kasoori methi powder, amchur, garam masala powder and salt and mix well.

Step 4

Make a long roll of the dough and cut into small pieces. Apply a little oil on each piece and spread into a little square. Divide paneer mixture into same number of portions as dough pieces.

Step 5

Place one portion in the centre of each dough square and roll. Seal the edges using a fork. Deep fry these in the hot oil till they turn golden. Drain on absorbent paper.

Step 6

Sprinkle amchur and red chilli powder. Serve hot.
